CrockPot Stuffed Steak

Welcome to my cooking blog! I'm always trying out new recipes and then forgetting how I made things or where I found the recipe, so I figured this would be a good way for me to keep some of my favorites all in one place!

Since I've gone back to school, I've become majorly obsessed with my CrockPot! Nothing beats throwing some stuff into the pot, leaving for a few hours, and then coming home to your house smelling DELICIOUS and having dinner almost ready! So convenient!

I found this recipe for CrockPot Stuffed Steak HERE a few days ago and I just had to try it! I was a little nervous about cooking steak in the CrockPot because I was afraid it would be dry, but I could not have been more wrong! This steak literally fell apart and was SO moist!


I served it with steamed red potatoes and salad with balsamic dressing.



The original recipe called for flank steak, but Wally World no longer carries that, so I just grabbed some round steak. Cheap (like $5 for 4 steaks!) and it turned out great!

CrockPot Stuffed Steak:

1 lb steak (I used 4 round steaks)
1 green apple, chopped with skin on
1/3 cup almonds, chopped
1/2 cup feta cheese (I used fat free feta)
2 tsp chopped garlic
1/2 cup honey
1/2 cup soy sauce (I will use low sodium soy sauce next time b/c it was just a little too salty)

Marinate steak in soy sauce and honey mixture for at least 5 hours. Or, throw it in the fridge to marinate overnight for some serious flavor!

Mix apple, almonds, feta, and garlic in a small bowl.

Place the steaks and juice mixture into the CrockPot.

Scoop about 2 tbsp of apple mixture onto each steak, roll up the steak and place seam side down. There will be extra mixture, so just save it for later.

Cook on low for about 6 hours, or the original recipe says you can cook it on high for 4 hours.

After cooking, place steak on a plate and then dump more of the apple mixture on top of each one.

This recipe is seriously delicious and SO easy! I think I will make it next time we have people over, so that I can pretend to be domestic! :)

  4. What a good idea for a blog! My hubby, aka, the chef in our household.. will LOVE this!

    Last night we had breakfast for dinner and he did the entire thing on the grill outside so we wouldn't have to use our oven, which heats up the house OR have that bacon smell linger for hours! It was AWESOME! He did bacon, omelets, and even toasted the English muffins on the grill!...Hmmm, maybe I can 'encourage' him to do a 'grilling' blog or something!

  5. Yummy, yummy, yummy! Cooking blogs are my fav!!! Jason has "concocted" some recipes that I'll have to pass along to you for your blog. I'll even send you pictures. His latest is stuffed poblano peppers and he serves them with steak that has a jalapeno/wine sauce on it. It's my favorite meal now. I'm going to try this crockpot steak. I, too, love my crockpot.

  6. OH, and just something I've found because of my low sodium restriction, anytime a recipe calls for soy sauce or a broth, I always use low sodium. It never takes away from the recipe I don't think. I can definitely see how full blown soy sauce could make this recipe too salty. :)

    I cook this crockpot meal a lot. Casey and Jason love it. It's a Food Network meal. I'm copying the original, but I've changed a few things that I think make it better. I add leeks to it (I add leeks to everything haha) which I think give it a great flavor! I also use boneless, skinless breasts instead of chicken breasts on the bone. If you use the bone, you do get the nice marrow flavor, but you spend your entire meal picking bones out of your food, because it all falls apart. I also use spinach instead of swiss chard leaves. I just love the flavor that spinach gives. Anyway, you just throw all of this in a crockpot in the a.m. and you don't have to stir or anything until it's time to eat. This is really great for people who work and want dinner ready when they get home. Enjoy!

    Tuscan Chicken

    2 cups sliced red onions
    1 cup sliced fennel bulb
    2 cloves garlic, minced
    1 (15-ounce) can white (cannellini) beans, rinsed and drained
    1 cup reduced-sodium chicken broth
    4 (5-ounce) skinless chicken breast halves (with bone)
    Salt and freshly ground black pepper
    2 tablespoons chopped fresh rosemary leaves
    1/2 cup sliced roasted red peppers (from water-packed jar)
    4 cups chopped Swiss chard leaves
    1 crusty loaf of bread
    2 tablespoons olive oil
    1 clove garlic

    Directions
    Arrange onions, fennel and garlic in bottom of slow cooker. Place beans on top of vegetables. Pour over chicken broth.

    Season chicken all over with salt and pepper and place on top of vegetables and beans in the slow cooker. Sprinkle rosemary over chicken. Place roasted red pepper slices on top of chicken. Arrange Swiss chard all around chicken.

    Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

    Slice bread and grill or toast, then drizzle with olive oil. Rub hot bread with garlic clove and serve with meal.
